Orzo Soup Vegan Recipe

Orzo soup goes down a treat with family and friends. Strong flavors working together, it can take as much heat as you want but I prefer hot, not spicy to let the natural flavors of sweet red pepper and sweet corn shine through.

Whilst I prefer fresh vegetables, it is not always possible to go to the veg market every day.  So I find it really useful to have a large jar of roasted sweet peppers.

Orzo Soup Recipe

Serves: 4
Preparation: 30 minutes


  • 5 Table spoons Orzo pasta boiled
  • 5 Table spoons sweet corn boiled
  • 250g Fresh wild rocket leaves
  • 4 Sweet red peppers (roasted and peeled)
  • 4 Large sun dried tomatoes
  • 2 Whole fresh ripe red tomatoes
  • 5 Medium potatoes chopped
  • 1 Table spoon of virgin olive oil
  • 1 Large white onion
  • 2 Garlic cloves chopped in half
  • 1 Hot chili de-seeded
  • Salt and pepper

  • Start by peeling and chopping the onion finely.
  • Stir fry onion, garlic with olive oil on medium heat for 1 minute.
  • Season with salt and pepper.
  • Add chopped potatoes, red pepper, tomatoes, chili and 700ml water.
  • Allow simmering for 5 minutes.
  • Blend until smooth and check seasoning.
  • Put the soup back on the heat and add boiled sweet corn and Orzo pasta.
  • Allow to simmer for 2 minutes and heat off.
  • Add wild rocket leaves just before serving.
  • Serve hot.

Keeping stock of sun dried tomatoes soaked in olive oil is also a good way to preserve tomatoes and they takes divine!  You can use these ingredients anytime, great in salads, soups, stews and sandwiches.  

Great that they are ready to use quickly to suit a busy lifestyle.
